The varieties — Yellow and Red Catuai, Catimor, and Parainema — are carefully handpicked at peak ripeness. Processing involves a meticulous 12–14 hour fermentation before being fully washed and slowly dried on patios and raised beds, locking in its vibrant character and layered flavor.
